if you inside the canyon start screen go up right and click there "profile" than click on the left on "models" and choose your skin, that´s it
Now you use all the time the same skin in canyon (Y)

I created my own skin and saved it,but i can't find an option to use this skin as my "active skin" ,it just saved and now is inbetween the other original skins

Not sure if it has been suggested before, but I was thinking of a sallom course. In that the track has to go downhill, might have to be freewheeling from when you start going down all the way to the bottom... And the turns need to alternate left and...
