"Fast" is less light bounces than "Ultra" so you end up with deeper/darker shadows sometimes. It's not just cutting corners, but it can also be an aesthetic choice.

Ultra will always have smoother lighting though. So if all you're looking at is the smoothness of the light, then yeah... Ultra is the way to go.

With fast the resolution is smaller

You guys make such perfect screenshots. Could someone explain me how to make the blurry/in motion effect ?
I tried to make that by myself but couldn't really make it happen.

Honestly I rarely use non-text editing for screenshots in third party programs. You can get really good photos using just FX Colors in MT
